Variety The most characteristic variety of western Crete in a red wine version. The “Kylistra” vineyard, 60 years old and ungrafted, is located at an altitude of 450 meters above the settlement of Tsourouniana, in Kissamos. |

Winemaking The winemaking process takes place with spontaneous fermentation in small wooden containers (200 liters). Half of the grapes ferment as whole clusters, uncrushed, while the other half undergoes crushing before fermentation. After fermentation is complete, the wine is transferred to a tank until bottling. |

Tasting notes & Food pairing A rich aromatic profile of red fruits (unripe cherry, raspberry). On the palate, velvety tannins are complemented by herbal notes of wild lavender. Refreshing acidity and a finish of sweet grape and sweet spices.It pairs well with Mediterranean dishes, tomato-based pasta, braised or grilled white meats, pizza, and spicy cheeses. Serving temperature: 15–16°C. |
